- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups fresh strawberries, hulled and sliced
- 2 tablespoons sugar (for the strawberries)
- Whipped cream (optional, for serving)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- Cream the softened butter and granulated sugar together in a mixing bowl until light and fluffy. Add the vanilla and mix well.
- Combine in another bowl the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, stirring until just combined.
- Press the dough firmly into the bottom of the prepared baking dish, ensuring an even layer.
- Toss the sliced strawberries with 2 tablespoons of sugar and allow them to sit for about 10 minutes to release their juices.
- Spread the sugared strawberries evenly over the shortbread crust.
- Bake for 25-30 minutes or until the edges are golden brown and the center is set.
- Cool completely before cutting into bars and serve with whipped cream if desired.
Notes
Try swapping strawberries for other berries like raspberries or blueberries for a different twist.
