Description

These S’mores Cookie Bars capture the nostalgic flavors of the classic campfire treat in an easy-to-make bar form, perfect for sharing.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (preferably semi-sweet)
  • 1 cup mini marshmallows
  • 1 cup graham cracker crumbs

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing it or lining it with parchment paper.
  2. Cream together the butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Add the eggs one at a time, followed by the vanilla extract.
  4. Combine the flour, baking soda, and salt in another bowl, then gradually fold this into the wet ingredients.
  5. Fold in the chocolate chips and graham cracker crumbs until evenly distributed.
  6. Layer half of the cookie dough into the prepared pan, then sprinkle the mini marshmallows on top.
  7. Top with the remaining cookie dough, ensuring to cover the marshmallows as much as possible.
  8. Bake for 25-30 minutes, or until the edges are golden brown.
  9. Cool the bars in the pan before slicing into squares and serving.
