Delicious shrimp sushi hand rolls filled with creamy avocado, crisp cucumber, and a kick of spicy mayo—perfect for a fun family meal or appetizer!


Ingredients

  • 1 pound juicy shrimp, peeled and deveined
  • 1 ripe avocado, cut into thin strips
  • 1 medium cucumber, cut into long, thin strips
  • 46 sheets of roasted nori
  • 1/4 cup spicy mayo (mix mayonnaise with sriracha to taste)

Instructions

  1. Prepare the shrimp: If using raw shrimp, boil them in salted water until they turn pink and opaque, about 2-3 minutes. Drain and let them cool.
  2. Cut the avocado and cucumber: Slice the avocado in half, remove the pit, and use a spoon to scoop out the flesh. Cut it into thin strips. For the cucumber, cut off the ends and slice it lengthwise into thin strips.
  3. Lay a sheet of nori: Place a nori sheet on a clean, flat surface, shiny side down.
  4. Fill the nori: Position a few cooked shrimp, a couple of avocado slices, and cucumber strips in a line along one edge of the nori.
  5. Drizzle the spicy mayo: A little goes a long way—just a touch will add excitement to your fillings.
  6. Roll it tightly: Start with the filled edge and roll the nori tightly, similar to rolling a burrito. Use a bit of water to seal the edge.
  7. Serve immediately: Cut the rolls in half or leave them whole—either way, enjoy right away for the best flavor and texture!

Notes

Best served fresh with dipping soy sauce, pickled ginger, and wasabi. Experiment with different fillings and keep nori sealed away from moisture.
