Description

These Reuben Balls are a playful twist on the classic Reuben sandwich, transformed into crispy, bite-sized delights served with a spicy dipping sauce.


Ingredients

  • 1 cup chopped corned beef
  • 1 cup drained sauerkraut
  • 1 cup shredded Swiss cheese
  • 4 oz cream cheese, softened
  • 1 cup rye breadcrumbs
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • Vegetable oil for frying or spray for air frying
  • 0.5 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon prepared horseradish
  • 1 teaspoon hot sauce
  • 1 tablespoon sweet relish
  • 0.25 teaspoon smoked paprika
  • Pinch of salt

Instructions

  1. Mix the chopped corned beef, sauerkraut, Swiss cheese, cream cheese, garlic powder, onion powder, salt, and pepper in a large mixing bowl until well integrated.
  2. Shape the mixture into walnut-sized balls and refrigerate for at least 30 minutes to chill.
  3. Prepare three separate bowls: one for the flour, one for the beaten eggs, and the last for the rye breadcrumbs.
  4. Dredge each ball in flour, dip it into the egg, and coat it with rye breadcrumbs.
  5. Heat vegetable oil in a skillet to 350°F (175°C) and fry the Reuben balls in batches for about 3–4 minutes until golden brown, or air fry at 400°F (200°C) for about 10 minutes, flipping halfway through.
  6. Mix the mayonnaise, ketchup, horseradish, hot sauce, relish, smoked paprika, and salt in a small bowl for the dipping sauce and chill it until ready to serve.

Notes

Chill the mixture before frying to help the balls maintain their shape. These can be kept in the refrigerator for up to three days or frozen for up to three months before frying.
