A delightful and easy-to-make potato salad that’s perfect for summer BBQs and family gatherings.
Ingredients

- 2 pounds of potatoes (Yukon Gold or red potatoes)
- 1 cup of mayonnaise
- 2 tablespoons of mustard (yellow or Dijon)
- 1/4 cup of diced red onion
- 1/4 cup of chopped celery
- Salt and pepper to taste
- 1 tablespoon of vinegar (optional)
- Hard-boiled eggs (optional, for garnish)
Instructions
- Boil the potatoes until they’re tender, about 15-20 minutes.
- Drain the potatoes and let them cool, then chop into bite-sized pieces.
- Combine mayonnaise, mustard, diced red onion, chopped celery, vinegar (if using), salt, and pepper in a large bowl.
- Add the cooled potato pieces and gently fold until coated.
- Taste and adjust seasoning as necessary.
- Optionally, fold in chopped hard-boiled eggs.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Serve garnished with fresh parsley or chives. Pairs well with grilled meats and refreshing drinks.
