Description

A delightful and easy-to-make potato salad that’s perfect for summer BBQs and family gatherings.


Ingredients

  • 2 pounds of potatoes (Yukon Gold or red potatoes)
  • 1 cup of mayonnaise
  • 2 tablespoons of mustard (yellow or Dijon)
  • 1/4 cup of diced red onion
  • 1/4 cup of chopped celery
  • Salt and pepper to taste
  • 1 tablespoon of vinegar (optional)
  • Hard-boiled eggs (optional, for garnish)

Instructions

  1. Boil the potatoes until they’re tender, about 15-20 minutes.
  2. Drain the potatoes and let them cool, then chop into bite-sized pieces.
  3. Combine mayonnaise, mustard, diced red onion, chopped celery, vinegar (if using), salt, and pepper in a large bowl.
  4. Add the cooled potato pieces and gently fold until coated.
  5. Taste and adjust seasoning as necessary.
  6. Optionally, fold in chopped hard-boiled eggs.
  7. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Serve garnished with fresh parsley or chives. Pairs well with grilled meats and refreshing drinks.
