Description
Crispy on the outside and gooey on the inside, these Potato Cheese Sticks are the perfect savory snack for any occasion.

- 3 russet potatoes (cooked and cubed)
- ¼ cup bacon (diced)
- ¼ cup green onion (diced)
- ½ cup sour cream
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 block cheddar cheese (cut into strips)
- ⅔ cup cornstarch
- 100 g panko breadcrumbs
- Flour for dusting
- 1 egg (beaten)
- 1 liter vegetable oil or canola oil for frying
Instructions
- Combine the cooked and cubed potatoes, bacon, green onions, sour cream, salt, and pepper in a bowl.
- Cut the cheddar cheese into strips about ¼ inch thick.
- Take a spoonful of the potato mixture, flatten it out, and place a cheese strip in the center, wrapping the mixture around it.
- Set up bowls for coating: flour, beaten egg, and a mixture of cornstarch and panko breadcrumbs.
- Roll each potato stick in flour, dip it in egg, and coat it in the panko mixture.
- Heat the oil in a deep fryer or pot to 350°F (180°C) and fry the sticks for about 3 minutes until golden brown.
- Remove the fried sticks from the oil and place them on paper towels to absorb excess oil.
- If baking, preheat the oven to 400°F (200°C) and bake for about 15 minutes.
- Cool for a few minutes before serving.
Notes
For a healthier twist, consider using sweet potatoes instead of russets. You can also swap the cheddar for mozzarella or gouda.
