Description
A classic creamy and tangy potato salad made with Yukon Gold potatoes, perfect for barbecues, picnics, and family gatherings.
Ingredients
Scale
- 2 pounds Yukon Gold potatoes (peeled and cut into chunks)
- 1 tablespoon salt (for boiling water)
- 1 cup mayonnaise
- 2 tablespoons yellow mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 1 teaspoon salt (for the dressing)
- 3 hard-boiled eggs (chopped)
- 1/2 cup finely chopped celery
- 1/4 cup finely chopped red onion
- 1/4 cup chopped dill pickles
- 1 tablespoon pickle juice
- 1 tablespoon fresh parsley (chopped)
Instructions
- Boil the Potatoes: In a large pot, add the chunks of Yukon Gold potatoes and cover them with water. Add a tablespoon of salt. Bring to a boil and cook for about 10–15 minutes until the potatoes are tender but not mushy. Drain and let them cool.
- Prepare the Dressing: While the potatoes cool, grab a mixing bowl. Combine the mayonnaise, yellow mustard, apple cider vinegar, sugar, black pepper, and one teaspoon of salt. Stir well until smooth and creamy.
- Add the Vegetables and Eggs: Gently fold in the chopped celery, red onion, dill pickles, and hard-boiled eggs into the dressing mixture.
- Combine Potatoes and Dressing: Once the potatoes are cool, cut them into bite-sized pieces if necessary. Fold the potatoes into the dressing and vegetable mixture carefully to maintain the integrity of the potatoes.
- Chill Before Serving: Cover the salad with plastic wrap and refrigerate for at least 1 hour to allow the flavors to blend beautifully.
Notes
Store the potato salad in an airtight container in the fridge for up to 3–5 days. Optionally freeze but note texture changes.
