Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and sugar in a mixing bowl until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract, combining until well integrated.
- Whisk together the flour, baking soda, and salt in a separate bowl.
- Slowly add the dry ingredients to the wet mixture, stirring until just combined.
- Arrange the pineapple rings on the baking sheet and sprinkle additional sugar over them.
- Scoop dough onto the pineapple rings, covering them completely.

Notes
