A delightful twist on the classic dessert, combining juicy peaches with crispy egg rolls, perfect for any occasion.


Ingredients

  • 2 cups peeled and diced fresh peaches (or canned, drained)
  • 0.25 cup granulated sugar
  • 0.25 cup brown sugar
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 10 egg roll wrappers
  • Water for sealing the wrappers
  • Vegetable oil for frying
  • Powdered sugar for dusting (optional)
  • Vanilla ice cream for serving (optional)

Instructions

  1. Combine diced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, lemon juice, and vanilla extract in a medium saucepan over medium heat.
  2. Stir continuously for about 5-7 minutes until the mixture thickens and becomes syrupy. Remove from heat and let it cool slightly.
  3. Lay an egg roll wrapper on a clean surface in a diamond shape.
  4. Place 2 tablespoons of the peach filling in the center of the wrapper.
  5. Fold the bottom corner up over the filling. Then, fold in the sides and roll tightly, sealing the edge with a little water.
  6. Repeat this process with the remaining wrappers and filling.
  7. Heat about 2 inches of vegetable oil to 350°F (175°C) in a deep skillet.
  8. Fry the egg rolls in batches, turning occasionally, until golden brown and crispy, about 2-3 minutes per side.
  9. Transfer the cooked egg rolls to a paper towel-lined plate to drain excess oil.
  10. Dust with powdered sugar if desired and serve immediately, possibly alongside a scoop of vanilla ice cream.

Notes

Use ripe peaches for the best flavor. For variations, consider adding berries or spices for a twist.
