- 2 chicken breasts, diced
- 8 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced chicken and season with salt and pepper. Cook until golden and no longer pink, about 5-7 minutes.
- Stir in the minced garlic and sauté for another minute until fragrant.
- Pour in the chicken broth and bring it to a boil.
- Add the penne pasta, cover the pot, and cook according to package instructions until al dente.
- Lower the heat, then stir in the heavy cream and Parmesan cheese until smooth and creamy.
- Adjust seasoning with more salt and pepper if necessary.
- Serve warm, garnished with chopped parsley.
Notes
For a lighter dish, substitute half the heavy cream with low-fat milk or Greek yogurt. Add spinach or peas for extra nutrients.
