Description

Ingredients

  • 2 chicken breasts, diced
  • 8 oz penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced chicken and season with salt and pepper. Cook until golden and no longer pink, about 5-7 minutes.
  3. Stir in the minced garlic and sauté for another minute until fragrant.
  4. Pour in the chicken broth and bring it to a boil.
  5. Add the penne pasta, cover the pot, and cook according to package instructions until al dente.
  6. Lower the heat, then stir in the heavy cream and Parmesan cheese until smooth and creamy.
  7. Adjust seasoning with more salt and pepper if necessary.
  8. Serve warm, garnished with chopped parsley.

Notes

For a lighter dish, substitute half the heavy cream with low-fat milk or Greek yogurt. Add spinach or peas for extra nutrients.
