A comforting dish that combines garlic, Parmesan, and tender chicken with pasta, all made in one pan for easy cleanup.

- 4 boneless, skinless chicken breasts (about 680g)
- 8 oz (225g) penne or rotini pasta
- 4 cloves fresh garlic, minced
- 2 cups low-sodium chicken broth (480ml)
- 1 cup heavy cream (240ml)
- 1 cup freshly grated Parmesan cheese (100g)
- 2 tbsp olive oil (30ml)
- 2 cups fresh spinach (optional, about 60g)
Instructions
- Prepare the chicken: Season the chicken breasts on both sides with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for about 6 minutes on each side until they are golden brown. Once cooked, remove the chicken from the pan and set it aside to rest.
- Sauté garlic: In the same skillet, reduce the heat slightly, then add the minced garlic. Sauté for about 1 minute until fragrant, being cautious not to burn it.
- Cook the pasta: Add the pasta and pour in the chicken broth. Increase the heat to bring the mixture to a boil. Cover the skillet and let it simmer for about 10 minutes until the pasta is al dente.
- Make it creamy: Lower the heat and stir in the heavy cream and grated Parmesan cheese. Mix well until everything is well combined and creamy.
- Finish and serve: Slice the rested chicken and return it to the skillet. If you’re using spinach, toss it in now and gently mix to coat everything in the creamy sauce. Serve warm, garnished with extra Parmesan if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Add a splash of broth or cream when reheating to revive the creamy texture.
