Instructions
- Preheat the oven to 325°F (160°C).
- Mix the cream cheese until smooth and free of lumps.
- Combine the sugar and vanilla extract, mixing until well combined.
- Incorporate the eggs one at a time, mixing fully before adding the next.
- Stir in the sour cream until smooth.
- Prepare a muffin tin with graham cracker crust cups.
- Fill the cups with cheesecake batter, about two-thirds full.
- Bake for 20 to 25 minutes until set but slightly jiggly in the center.
- Cool to room temperature then refrigerate for at least 2 hours before serving.
- Serve with your choice of toppings.
