Description

A delightful meal combining pillowy gnocchi with a rich, creamy sauce of heavy cream, spinach, and juicy cherry tomatoes, making it perfect for cozy family dinners.


Ingredients

  • 1 package gnocchi
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the gnocchi by boiling salted water, adding gnocchi, and cooking according to package instructions until they float. Drain and set aside.
  2. Sauté onions and garlic in olive oil until onion is translucent, about 5 minutes. Then add garlic and sauté for 1 more minute.
  3. Add the halved cherry tomatoes and cook until softened.
  4. Toss in the fresh spinach and cook until wilted, about 2-3 minutes.
  5. Pour in the heavy cream and bring to a simmer, then gradually stir in grated parmesan cheese until smooth.
  6. Combine the cooked gnocchi with the sauce, tossing to coat.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh basil.

Notes

Consider swapping spinach for kale, or using a different type of cheese for variations. Add cooked chicken or shrimp for extra protein.
