- 1 package gnocchi
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 cup heavy cream
- 1/2 cup parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the gnocchi by boiling salted water, adding gnocchi, and cooking according to package instructions until they float. Drain and set aside.
- Sauté onions and garlic in olive oil until onion is translucent, about 5 minutes. Then add garlic and sauté for 1 more minute.
- Add the halved cherry tomatoes and cook until softened.
- Toss in the fresh spinach and cook until wilted, about 2-3 minutes.
- Pour in the heavy cream and bring to a simmer, then gradually stir in grated parmesan cheese until smooth.
- Combine the cooked gnocchi with the sauce, tossing to coat.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil.
Notes
Consider swapping spinach for kale, or using a different type of cheese for variations. Add cooked chicken or shrimp for extra protein.
