Ingredients

- 2 cups mashed potatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large mixing bowl, add the mashed potatoes, cheese, breadcrumbs, egg, chopped green onions, salt, and pepper. Mix thoroughly until well combined.
- Using your hands, form the mixture into small balls or puffs, about the size of a golf ball.
- In a frying pan, heat a generous amount of oil over medium heat.
- Carefully place the puffs into the hot oil, frying for about 3 to 4 minutes per side, until golden brown and crispy.
- Once golden, remove the puffs and let them drain on a plate lined with paper towels. Serve hot and enjoy!
