Description
Delightful cookies combining zesty lemon and fragrant lavender for a refreshing treat.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 tablespoon lemon zest
- 1 tablespoon dried lavender
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup powdered sugar
- 2 tablespoons lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- Cream the softened butter and granulated sugar together until light and fluffy—this should take about 3-4 minutes.
- Beat in the egg, followed by the lemon zest and dried lavender until everything is well combined.
- Whisk together the all-purpose flour, baking powder, and salt in another bowl.
- Add the dry ingredients to the wet mixture gradually, mixing until just combined—avoid overmixing to keep your cookies tender.
- Scoop tablespoons of the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges turn lightly golden.
- Remove from the oven and let the cookies cool completely on a wire rack.
- Mix the powdered sugar and lemon juice until smooth for the glaze, then drizzle over the cooled cookies.
Notes
For a different flavor, you can substitute dried lavender with culinary lavender or a hint of lemon extract.
