Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened butter and granulated sugar together until light and fluffy—this should take about 3-4 minutes.
  3. Beat in the egg, followed by the lemon zest and dried lavender until everything is well combined.
  4. Whisk together the all-purpose flour, baking powder, and salt in another bowl.
  5. Add the dry ingredients to the wet mixture gradually, mixing until just combined—avoid overmixing to keep your cookies tender.
  6. Scoop tablespoons of the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges turn lightly golden.
