- 2 green onions, sliced (whites and greens separated)

- Quick pickled cucumbers (2 tablespoons rice vinegar, 1 teaspoon sugar, pinch of salt)

- Steamed or sautéed greens (optional)
Instructions
- Prep your ingredients: Mince garlic, grate ginger, slice green onions, and prepare quick pickled cucumbers.
- Cook the ground beef: Heat skillet, brown beef until no longer pink (6-7 minutes).
- Add aromatics and sauce: Stir in garlic, ginger, and white onion; pour in soy sauce, sugar, sesame oil, and red pepper flakes, then simmer (2 minutes).
- Finish with green onions: Stir in green onion tops and adjust seasoning.
- Serve over rice: Top with beef mixture, cucumbers, sesame seeds, and optional fried egg.
