- 1 lb ground chicken
- 1/2 cup buffalo sauce, divided
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt to taste
- Black pepper to taste
- 8 oz shredded mozzarella cheese
- 1/2 cup cooked bacon, crumbled
- 1/2 cup plain flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (panko or regular)
- Vegetable oil for frying
Instructions
- Mix the ground chicken, 1/4 cup buffalo sauce, garlic powder, onion powder, paprika, salt, and black pepper in a bowl. Fold in the mozzarella cheese and crumbled bacon.
- Shape about 2 tablespoons of chicken mixture into balls and place them on a plate.
- Prepare a coating station with flour, beaten eggs, and breadcrumbs in three shallow dishes.
- Coat each chicken ball by rolling in flour, dipping in eggs, and finally coating with breadcrumbs.
- Fry the coats in hot vegetable oil (about 350°F) for 3-4 minutes until golden brown.
- Drain on paper towels and drizzle with remaining buffalo sauce.
- Serve immediately while warm and crisp.
