Description

A delightful twist on a classic snack featuring soft, chewy pretzels stuffed with gooey, melted mozzarella cheese.


Ingredients

  • 2 cups warm water
  • 2 tablespoons granulated sugar
  • 1 packet active dry yeast
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup baking soda
  • 1 egg (beaten, for egg wash)
  • Gooey mozzarella cheese (for stuffing)
  • Freshly chopped rosemary (optional, for a flavor twist)
  • Grated Parmesan cheese (for enhanced flavor)
  • Flaky sea salt (to top)

Instructions

  1. Combine ingredients: In a large bowl, mix warm water, sugar, and yeast together. Let it sit for about 5 minutes until frothy.
  2. Make dough: Add flour and salt, stirring until a shaggy dough forms.
  3. Knead: Turn the dough out onto a floured surface and knead for about 5 minutes or until smooth.
  4. Let it rise: Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm spot for about an hour or until it doubles in size.
  5. Preheat the oven: While the dough rises, preheat your oven to 450°F (230°C).
  6. Shape pretzels: Once risen, punch down the dough, divide it into 12 equal pieces. Flatten each piece and stuff with a generous amount of mozzarella, then shape into pretzels.
  7. Boil the pretzels: In a large pot, bring about 10 cups of water to a boil and add baking soda. Gently add a few pretzels at a time, boiling for 30 seconds on each side.
  8. Prepare for baking: Place the boiled pretzels on a baking sheet lined with parchment paper. Brush each pretzel with the beaten egg, and sprinkle with chopped rosemary, Parmesan cheese, and sea salt.
  9. Bake: Bake for 12-15 minutes until golden brown.

Notes

These pretzels are best fresh but can be stored in an airtight container for up to 3 days, or frozen for up to 3 months.
