Ingredients

  • 1 lb ground turkey (lean)
  • 4 oz cream cheese, softened
  • 5 oz fresh spinach, chopped or whole
  • 1 cup cheddar cheese, freshly shredded
  • 1 egg
  • ½ tsp garlic powder
  • ¼ tsp salt
  • Black pepper, to taste
  • Optional: ½ cup diced red bell peppers
  • Optional: ¼ cup plain Greek yogurt
  • Optional: Substitute mozzarella cheese for cheddar if desired

Instructions

  1. Preheat the oven to 375°F and grease a 9×9 baking dish.
  2. Cook the ground turkey in a skillet over medium heat for 6-8 minutes until browned.
  3. Add the garlic powder, salt, and pepper; cook for another minute, then stir in the spinach.
  4. Incorporate the cream cheese, reduce the heat, and mix until melted, then let cool for 5 minutes.
  5. Combine the beaten egg and ½ cup cheddar cheese into the turkey mixture.
  6. Transfer the mixture into the prepared baking dish and top with the remaining cheddar.
  7. Bake for 20-25 minutes until golden and bubbly.
  8. Rest for 10 minutes before slicing and serving.
