Ingredients

Scale
  • 1 head of cabbage, chopped
  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup corn, frozen or canned

  • 2 cups Fritos
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).

  3. Add the chopped cabbage to the skillet and sauté until it begins to soften, about 5 minutes.
  4. Stir in the black beans, diced tomatoes, corn, and ranch dressing mix. Keep cooking until everything is heated through.
  5. Transfer the mixture to a greased casserole dish, spreading it evenly.
  6. Top with shredded cheese and Fritos.
  7. Bake in the oven for 25-30 minutes, or until the cheese is melted and bubbly along the edges.
  8. Serve warm and enjoy the culinary bliss!

Notes

You can substitute lean turkey for ground beef for a healthier option. Feel free to experiment with vegetables.
