- 1 head of cabbage, chopped
- 1 pound ground beef or turkey
- 1 onion, chopped
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup corn, frozen or canned
- 1 packet ranch dressing mix
- 1 cup shredded cheese (optional)
- 2 cups Fritos
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground meat and chopped onion in a large skillet over medium heat. Drain any excess fat.
- Add the chopped cabbage to the skillet and sauté until it begins to soften, about 5 minutes.
- Stir in the black beans, diced tomatoes, corn, and ranch dressing mix. Keep cooking until everything is heated through.
- Transfer the mixture to a greased casserole dish, spreading it evenly.
- Top with shredded cheese and Fritos.
- Bake in the oven for 25-30 minutes, or until the cheese is melted and bubbly along the edges.

Notes
You can substitute lean turkey for ground beef for a healthier option. Feel free to experiment with vegetables.
