Instructions
- Cook the bacon until crispy in a large skillet over medium heat, about 5-7 minutes. Remove and drain on paper towels, leaving drippings in the skillet.
- Prep the skillet by ensuring you have about 2 tablespoons of bacon fat, adding butter or oil if necessary.
- Sauté the fresh corn kernels in the skillet for about 5-7 minutes until tender and slightly caramelized, stirring often.
- Season the corn with salt and pepper to enhance its natural flavors.
- Add the crumbled crispy bacon back into the skillet and stir to combine, cooking for another minute.
- Serve warm, garnished with fresh herbs or cheese if desired.
Notes
Best enjoyed fresh but can be stored in an airtight container for 3-4 days in the fridge. Can also be frozen for 2-3 months.
