Description

A delightful side dish that combines the sweetness of fresh corn with the savory crunch of crispy bacon.


Ingredients

  • Fresh corn kernels (about 4-5 ears)
  • 4 slices of crispy bacon
  • 2 tablespoons of butter or oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the bacon until crispy in a large skillet over medium heat, about 5-7 minutes. Remove and drain on paper towels, leaving drippings in the skillet.
  2. Prep the skillet by ensuring you have about 2 tablespoons of bacon fat, adding butter or oil if necessary.
  3. Sauté the fresh corn kernels in the skillet for about 5-7 minutes until tender and slightly caramelized, stirring often.
  4. Season the corn with salt and pepper to enhance its natural flavors.
  5. Add the crumbled crispy bacon back into the skillet and stir to combine, cooking for another minute.
  6. Serve warm, garnished with fresh herbs or cheese if desired.

Notes

Best enjoyed fresh but can be stored in an airtight container for 3-4 days in the fridge. Can also be frozen for 2-3 months.
