- 1 cup of chopped spinach
- 1 bell pepper (red or yellow), diced
- 1 small onion, chopped
- 1 medium tomato, diced
- 2 large eggs (or egg alternative)
- ½ cup of cooked quinoa (or brown rice)
- ¼ cup of crumbled feta cheese (optional)
- Olive oil for cooking
- Salt and pepper to taste
- Fresh herbs (like parsley or basil) for garnish
Instructions
- Prep the vegetables: Begin by washing and chopping your spinach, bell pepper, onion, and tomato.
- Sauté your base: In a medium skillet, heat a tablespoon of olive oil over medium heat. Add the onions and bell peppers, cooking until softened, about 5 minutes.
- Add the tomatoes & spinach: Toss in the diced tomato and spinach. Cook for another 2-3 minutes until the spinach is wilted.
- Incorporate the eggs: Push the vegetable mixture to one side of the skillet and crack the eggs into the empty space. Scramble them gently, cooking until they’re just set.
- Mix together: Combine the scrambled eggs with the sautéed vegetables, and add in your cooked quinoa or brown rice.
- Season & garnish: Season with salt and pepper to taste, and sprinkle with crumbled feta and fresh herbs before serving.
Notes
Feel free to throw in any other vegetables you have on hand! Add avocado or lemon juice for extra flavor.
