A delightful twist on a classic quesadilla with Mediterranean flavors from feta cheese, fresh veggies, and olives.
Ingredients

- 4 Flour tortillas
- 1 cup Feta cheese, crumbled
- 2 cups Fresh spinach
- 1 cup Cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and sliced
- 2 tablespoons Olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat your skillet over medium heat, adding a splash of olive oil to coat the bottom.
- Prepare your tortilla by laying one flour tortilla flat in the skillet.
- Layer the ingredients: sprinkle crumbled feta cheese over one half, followed by a handful of fresh spinach, halved cherry tomatoes, and sliced kalamata olives.
- Top it off by folding the tortilla in half to create a semicircle.
- Cook until golden: allow it to cook for about 2-3 minutes, or until the bottom is golden brown. Carefully flip and cook the other side until golden and the cheese has melted, about 2 more minutes.
- Serve by removing from the skillet, slicing into wedges, and enjoying while warm!
Notes
Serve with tzatziki or balsamic reduction on the side. Can be paired with Greek salad or roasted vegetables.
