- 8 hard-boiled eggs
- 2 cups cooked elbow macaroni
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon white vinegar
- Salt and pepper to taste
- 1/4 cup diced celery
- 1/4 cup diced red onion
- Paprika for garnish
Instructions
- Begin by chopping the hard-boiled eggs into bite-sized pieces and set them aside.
- In a large mixing bowl, combine the cooked macaroni, mayonnaise, Dijon mustard, white vinegar, salt, and freshly cracked pepper.
- Gently fold in the chopped eggs, diced celery, and diced red onion until all ingredients are thoroughly mixed.
- Taste and adjust seasoning if needed; add more salt or pepper according to your preference.
- Cover the bowl with plastic wrap and refrigerate for at least one hour to let flavors meld.
- Just before serving, sprinkle paprika on top for color and flavor.
Notes
