- 4 small to medium chicken breasts (or 2 large halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup parmesan cheese, grated
- 1 cup spinach, chopped (optional)
Instructions
- Season chicken breast generously with salt and pepper on both sides.
- Heat olive oil in a skillet over medium-high heat until shimmering.
- Carefully add the chicken to the skillet and cook for 5-6 minutes per side or until golden brown and crispy. Remove from the skillet and set aside.
- Lower the heat to medium. Add the minced garlic to the same skillet, sautéing for about 30 seconds until fragrant.
- Slowly pour in the cream, stirring continuously to combine with the flavors left in the pan.
- Add the Italian seasoning and grated Parmesan cheese, stirring until the mixture is smooth and creamy.
- If you’re including spinach, toss it in now and let it simmer in the sauce for 2-3 minutes until wilted.
- Return the crispy chicken to the skillet, spooning the luscious sauce over the top.
- Simmer everything together for about 1 minute to rewarm the chicken, then take it off the heat.
- Serve hot with your choice of pasta, roasted vegetables, or creamy mashed potatoes.
