- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon Dijon mustard
- 1/4 cup chopped onions
- 1/4 cup chopped celery
- 1/4 cup chopped pickles

- Chopped fresh parsley for garnish (optional)
Instructions
- Begin by boiling the potatoes in salted water until tender, which should take about 15-20 minutes. Once done, drain them and let them cool.
- In a large bowl, mix together the mayonnaise, sour cream, and Dijon mustard until well blended.
- Peel and chop the cooled potatoes into bite-sized pieces, then gently fold them into the dressing in the bowl.
- Stir in the chopped onions, celery, and pickles to add crunch and flavor.
- Season with salt and pepper to taste. It’s important to taste as you go.
- Once everything is combined, cover and refrigerate for at least an hour before serving.
- If you desire, garnish with chopped parsley before serving.
