  • 1/2 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1/4 cup chopped onions
  • 1/4 cup chopped celery
  • 1/4 cup chopped pickles
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Begin by boiling the potatoes in salted water until tender, which should take about 15-20 minutes. Once done, drain them and let them cool.
  2. In a large bowl, mix together the mayonnaise, sour cream, and Dijon mustard until well blended.
  3. Peel and chop the cooled potatoes into bite-sized pieces, then gently fold them into the dressing in the bowl.
  4. Stir in the chopped onions, celery, and pickles to add crunch and flavor.
  5. Season with salt and pepper to taste. It’s important to taste as you go.
  6. Once everything is combined, cover and refrigerate for at least an hour before serving.
  7. If you desire, garnish with chopped parsley before serving.
