Description

A delightful dish featuring juicy chicken thighs in a rich herb-infused cream sauce served with buttery mashed potatoes and sweet honey-glazed carrots.


Ingredients

  • 4 Chicken thighs
  • 1 cup Heavy cream
  • 2 tbsp Fresh herbs (Thyme and rosemary)
  • 2 cloves Garlic, minced
  • Salt & pepper, to taste
  • 4 Potatoes, peeled and chopped
  • 2 tbsp Butter
  • 1/2 cup Milk
  • 4 Carrots, sliced
  • 2 tbsp Honey

Instructions

  1. Prepare the chicken: Season the chicken thighs with salt, pepper, and your choice of fresh herbs.
  2. Cook the chicken: In a large pan, heat oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side until golden brown.
  3. Make the sauce: In the same pan, add minced garlic and sauté until fragrant. Pour in the heavy cream and simmer for 3-5 minutes until thickened.
  4. Prepare mashed potatoes: Boil peeled and chopped potatoes in salted water until tender, then mash with butter and milk until smooth.
  5. Glaze the carrots: Steam carrots until tender, then drizzle with honey and sauté briefly.
  6. Serve: Plate the chicken with mashed potatoes and honey-glazed carrots. Enjoy!

Notes

Use a meat thermometer to ensure chicken is cooked to 165°F. Let the chicken rest after cooking to retain juices. Substitute heavy cream with half-and-half or non-dairy alternatives if desired.
