- 2 chicken breasts
- 8 oz rotini pasta
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Chopped parsley for garnish
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.
- Prepare the chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat olive oil over medium heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, until golden brown and thoroughly cooked. Remove the chicken from the skillet and let it rest on a cutting board.
- Make the garlic sauce: In the same skillet, reduce the heat to medium-low and add the minced garlic. Sauté until fragrant, about 1 minute, being careful not to burn it.
- Add cream and cheese: Pour in the heavy cream and let it gently simmer. Gradually stir in the grated Parmesan cheese until it melts and the sauce is smooth.
- Combine pasta and sauce: Toss the cooked rotini into the skillet, ensuring each piece is well-coated with the creamy sauce.
- Serve: Slice the rested chicken breasts and place them atop the pasta. Garnish generously with chopped parsley and additional Parmesan if desired. Serve warm and enjoy!
Notes
Don’t overcook the chicken and use freshly grated parmesan for better flavor and melting.
