- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 8 oz lasagna noodles, broken into pieces
- 2 cups spinach or kale
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- Parmesan cheese for serving
Instructions
- Sauté the aromatics: In a large pot, heat a drizzle of olive oil. Add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant.
- Build the soup base: Stir in the shredded chicken, chicken broth, diced tomatoes, and Italian seasoning. Bring the mixture to a boil over medium-high heat.
- Cook the noodles: Once boiling, add the broken lasagna noodles. Reduce heat and let the soup simmer until the noodles are tender, about 10-12 minutes.
- Add creaminess: Lower the heat and stir in the heavy cream and chopped spinach (or kale). Season with salt and pepper to taste.
- Mix in the cheeses: Finally, stir in the ricotta cheese until well combined and creamy.
- Serve: Ladle the soup into bowls and top with shredded mozzarella and a sprinkle of Parmesan cheese. Enjoy hot!
Notes
