Instructions
- Preheat your oven to 375°F (190°C).
- Combine cranberries, orange juice, brown sugar, and soy sauce in a medium saucepan; cook over medium heat until cranberries burst and sauce thickens, about 10 minutes.
- Season chicken breasts with salt and pepper; heat olive oil in an oven-safe skillet and sear chicken until golden brown, about 3-4 minutes on each side.
- Pour the cranberry-orange glaze over seared chicken until well-coated; transfer the skillet to the preheated oven.
- Bake for 20-25 minutes or until chicken is cooked through (internal temperature of at least 165°F / 74°C).
- Garnish with orange zest before serving.
