Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar in a large mixing bowl until smooth.
- Add the eggs one at a time, ensuring each is well incorporated before the next. Stir in the vanilla extract.
- Whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon in a separate bowl.
- Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
- Chill the dough in the refrigerator for about 30 minutes.
- Scoop tablespoon-sized portions of the chilled dough and roll them into balls.
- Coat each ball in the mixture of granulated sugar and ground cinnamon.
- Place the coated balls on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, until the edges are set.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a dairy-free version, substitute coconut oil for butter. Chilling the dough helps maintain cookie shape.
