Description

Delightful pastries combining rich vanilla custard and chocolate chips in fluffy brioche dough, perfect for brunch or dessert.


Ingredients

  • 4 cups all-purpose flour
  • 1/4 cup sugar
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1/2 cup milk
  • 1/2 cup unsalted butter, softened
  • 1 cup vanilla custard (store-bought or homemade)
  • 1 cup chocolate chips
  • 1 egg, for egg wash

Instructions

  1. Mix the dry ingredients: In a large mixing bowl, combine the flour, sugar, yeast, and salt.
  2. Combine the wet ingredients: In another bowl, whisk together the eggs and milk until well blended.
  3. Bring it together: Gradually pour the wet mixture into the dry ingredients. Stir until just combined.
  4. Knead the dough: Add the softened butter, and knead the dough until it’s smooth and elastic, about 10 minutes by hand or 5 minutes using a stand mixer.
  5. First rise: Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 60 minutes or until it has doubled in size.
  6. Punch down & divide: After the first rise, punch down the dough gently and divide it into equal portions, about 12-15 pieces.
  7. Fill the dough: Flatten each piece and place about a tablespoon of vanilla custard and a few chocolate chips in the center. Fold the dough over the filling to seal completely.
  8. Second rise: Arrange the filled brioches in a greased baking dish. Cover and allow them to rise for another 30 minutes.
  9. Preheat the oven: While the brioches are rising, preheat your oven to 375°F (190°C).
  10. Prep for baking: Brush the tops of the brioches with the egg wash for a golden finish.
  11. Bake: Bake for 20-25 minutes or until they are golden brown and cooked through.
  12. Cool & enjoy: Once baked, allow them to cool slightly before serving. They are best enjoyed warm.

Notes

For a richer taste, consider using dark chocolate chips. Store leftovers in an airtight container at room temperature for up to 2 days.
