Ingredients

  • 2 tablespoons chipotle honey sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and diced
  • 1/2 cup milk
  • 4 ounces smoked gouda cheese, shredded
  • 2 tablespoons butter

Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Mix together the chipotle honey sauce, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Rub the mixture all over the chicken thighs, ensuring they are liberally coated.
  4. Cook the chicken thighs directly on the grill for about 6-7 minutes on each side or roast them in the oven for approximately 25-30 minutes until cooked through.
  5. Boil a pot of salted water with the diced potatoes and cook until fork-tender, about 15 minutes.
  6. Drain the potatoes and return them to the pot.
  7. Add the milk, smoked gouda, and butter, and mash until creamy and smooth.
  8. Serve the chicken thighs on a plate alongside the smoked gouda mashed potatoes, and enjoy!

Notes
