- 2 medium zucchinis (about 2 cups shredded)
- 2 large eggs
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup shredded mozzarella cheese (for topping)
- Optional: fresh parsley or basil for garnish
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Shred the zucchini using a box grater or food processor.
- Remove excess moisture by placing the shredded zucchini in a clean kitchen towel or cheesecloth and squeezing out the liquid.
- Combine the shredded zucchini, eggs, ½ cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper in a large mixing bowl. Mix until well combined.
- Spread the mixture evenly onto the prepared baking sheet, forming a thin rectangle. Bake for 20–25 minutes or until golden brown and firm to the touch.
- Remove from the oven and sprinkle the remaining 1 cup of mozzarella evenly on top. Return to the oven for an additional 5–7 minutes or until the cheese is melted and bubbly.
- Let the breadsticks cool slightly before slicing into strips. Garnish with fresh herbs if desired and serve with your preferred dipping sauce.
Notes
Don’t forget to wring out the zucchini to avoid soggy breadsticks. Experiment with various cheeses and spices to customize your breadsticks to your taste.
