- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Mix the grated carrots, flour, granulated sugar, brown sugar, oil, eggs, and vanilla in a large bowl. Stir until well combined.
- Add baking powder, baking soda, cinnamon, nutmeg, and salt into the mixture, combine until just mixed.
- Pour the batter into the prepared baking pan, spreading it evenly.
- Bake for 25-30 minutes, or until a toothpick comes out clean. Allow the bars to cool completely in the pan.
- In a separate bowl, beat the cream cheese, powdered sugar, and lemon juice until smooth.
- Once cooled, spread the cream cheese mixture evenly on top of the bars.
- Cut into bars and serve.
Notes
Feel free to tweak the recipe with substitutions like whole wheat flour or applesauce for a healthier version.
