A delightful twist on classic carrot cake, these bars combine moist, spiced flavor with indulgent cream cheese frosting.


Ingredients

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Mix the grated carrots, flour, granulated sugar, brown sugar, oil, eggs, and vanilla in a large bowl. Stir until well combined.
  3. Add baking powder, baking soda, cinnamon, nutmeg, and salt into the mixture, combine until just mixed.
  4. Pour the batter into the prepared baking pan, spreading it evenly.
  5. Bake for 25-30 minutes, or until a toothpick comes out clean. Allow the bars to cool completely in the pan.
  6. In a separate bowl, beat the cream cheese, powdered sugar, and lemon juice until smooth.
  7. Once cooled, spread the cream cheese mixture evenly on top of the bars.
  8. Cut into bars and serve.
