Instructions

  1. Mix the Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  2. Cream the Butters and Sugars: In a large mixing bowl, combine the softened butter, brown sugar, and granulated sugar. Beat until light and fluffy.
  3. Incorporate the Eggs and Vanilla: Add the eggs one at a time, mixing well. Stir in the vanilla extract until fully combined.
  4. Combine Wet and Dry: Gradually add in the dry mixture to the wet mixture, mixing on low speed until just combined.
  5. Chill the Dough: Divide the dough into two equal portions, shape into disks, wrap in plastic wrap, and refrigerate for one hour.
  6. Prepare the Filling: Combine the brown sugar, cornstarch, and cinnamon in a small bowl.
  7. Preheat and Roll: Preheat your oven to 350°F (175°C) and roll out one disk of dough to about ¼ inch thick.
  8. Cut the Cookies: Cut the rolled-out dough into rectangles measuring approximately 3×4 inches.
