- 3 lb Beef Brisket
- 1 tbsp Olive Oil
- 1 tbsp Smoked Paprika
- 1 tbsp Garlic Powder
- 1 tbsp Onion Powder
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 cup Beef Broth
- 1 cup Shredded Cheddar Cheese
- 1/2 cup Shredded Monterey Jack Cheese
- 1/2 cup Beer (IPA or Stout)
- 1/4 cup Sour Cream
- 1 tbsp Dijon Mustard
- 1 tsp Worcestershire Sauce
- 1 lb Refrigerated Pizza Dough
- Coarse Salt (for sprinkling)
Instructions
- Prepare the brisket: In a slow cooker, add the brisket and drizzle with olive oil. Rub the brisket with smoked paprika, garlic powder, onion powder, salt, and pepper. Pour in the beef broth. Cover and cook on low for 8 hours, or until fork-tender.
- Make the beer cheese sauce: In a saucepan over medium heat, combine the shredded cheddar, Monterey Jack, and beer. Stir continuously until the cheese melts smoothly. Add the sour cream, Dijon mustard, and Worcestershire sauce. Mix to combine and remove from heat.
- Shred the brisket: Once cooked, remove the brisket from the slow cooker and shred it with two forks. Stir the shredded brisket into the beer cheese sauce to create the filling.
- Assemble the pretzel bombs: Preheat your oven to 400°F (200°C). Roll out the pizza dough and cut it into 12 equal squares. Place a spoonful of the brisket and beer cheese filling in the center of each square. Gather the corners of the dough and pinch to seal.
- Bake: Place the stuffed parcels seam-side down on a greased baking sheet. Sprinkle with coarse salt. Bake for 15 to 20 minutes or until the dough is golden brown.
- Serve: Allow to cool slightly before serving. Optional: Serve with mustard or your favorite dipping sauce.
Notes
For a different flavor, substitute brisket with pulled pork or shredded chicken. For spiciness, add diced jalapeños to the cheese mixture.
