Ingredients
- Eggroll wrappers
- Cooked bacon, chopped
- Cream cheese, softened
- Jalapeños, diced (seeds removed for less heat)
- Cheddar cheese, shredded
- Green onions, chopped
- Vegetable oil (for frying)
- Salt and pepper to taste
Instructions
- Prepare the filling: In a mixing bowl, combine the softened cream cheese, diced jalapeños, chopped bacon, shredded cheddar cheese, and green onions. Season with salt and pepper.
- Assemble the eggrolls: Lay out an eggroll wrapper, add 1-2 tablespoons of the filling mixture to the center.
- Roll them up: Fold the sides of the wrapper over the filling, then roll it tightly from the bottom. Seal the edges with water.
- Heat the oil: In a deep pan, heat vegetable oil over medium heat until hot enough for frying.
- Fry the eggrolls: Fry in batches until golden brown and crispy, about 3-4 minutes.
- Drain and serve: Remove eggrolls from oil and let them drain on paper towels. Serve warm.
Notes
For maximum flavor, use thick-cut bacon. Seal edges well to prevent leaking during frying. Can also be air-fried for a lighter version.
